Looking for something to make for tonight’s dinner, or to go on the side of something you have planned? Well this cheesy recipe will work for whatever you’re thinking (because cheese goes with everything)!
We wanted to share a recipe that can stand on its own or be paired with another dish (like a protein or alcoholic beverage of some sort)! So, we chose Scalloped Potatoes au Gratin! Gratin is a French cooking technique in which an ingredient is topped with a browned crust, often using breadcrumbs, grated cheese, eggs or butter (yum)!
1 tablespoon unsalted butter
1 yellow onion, finely chopped
2 cloves garlic, minced
1 ½ cups heavy cream
½ cup low-sodium chicken broth
2 teaspoons fresh thyme leaves
1 ½ teaspoon kosher salt
½ teaspoon ground black pepper
2 pounds russet potatoes, peeled and sliced
½ cup shredded cheddar and ½ cup shredded gruyere cheese (get these at The Cheese Gallery!)
Start by preheating the oven to 375 degrees F. While that heats up, melt the butter in a large pot over medium-high heat. Then add the onions and saute until softened and beginning to brown. Next, add the garlic and continue cooking for 1 minute. Stir in the cream, broth, and thyme, and season with the salt and pepper. Finally, add the potatoes and bring to a simmer. Continue cooking in the pot until the potatoes are tender when poked with a fork (10 to 15 minutes).
Next, move the potatoes and cream into a shallow baking dish. Sprinkle the cheeses evenly over the potatoes (this is our favourite step!). Put in the oven and let it bake until the surface begins to brown - 15 to 20 minutes. When you take the dish out of the oven, let it sit for 10 minutes and then serve and enjoy!
